Microwave Nachos Recipe

Microwave Nachos Recipe


One of my favorite easy microwave recipes is "Nachos". You can have it as a snack or make a big one and, dinner's served.

You can find lots of great recipes all over the web, but by just starting with a few of the main ingredients, you can add your own touch to make a great dish that will have everyone coming back for more.

Main Ingredients

Corn Chips (100g packet)
Tasty Cheese (grated) - 1 + 1/2 cups
Red Kidney Beans (2 x 300g cans)
Can Chopped Tomatoes (400g)
Onion (2 large)
Garlic (2 cloves)
Chili Powder (1/2 tea spoon)
Paprika (1 tea spoon)
Cumin (1/2 tea spoon)
Butter (30g)


Guacamole Topping

Cream Cheese (60g packaged)
Natural Yoghurt (1/4 cup)
Avocado (1 smallripe)
Lemon Juice (2 tea spoon)
Onion (1 small chopped)
Tobasco Sauce (few drops)

Peel the acocado and remove seed. Puree in a processor or blender with remaining ingredienys until smooth.


Method

1. Prepare the bean mix - combine the onion, butter, paprika, cumin, garlic and chili in a dish and cook on High for about 6 minutes (or until onions are tender). Drain and rinse the beans and slightly mash. Now add finely chopped tomatoes and beans to the dish, mix and cook on High for 10 minutes.

2. Next step place corn chips on large dish and sprinkle over with 1 cup of the cheese, cook in microwave on High for 1 minute to melt the cheese.

3. Now pour the bean mix into the centre of the coen chips, top with the guacamole mixture, then sprinkle the remaining cheese and cook on High for 4 minutes or until the cheese melts
